WHITE TRUFFLES
- Found mainly in Northern Italy and the countryside of Alba
- Only grow in the cooler months of fall and winter, making them the most rare truffle of all
- More delicate flavour compared to black truffles
- Lighter and more subtle
- Still packs an incredible variety of flavours
- Garlic, earthy, robustly pungent, uniquely funky, sweeter

BLACK TRUFFLES
- Native to Southern Europe
- In its original handpicked state, black truffles are the most expensive edible mushroom in the world
- Difficult to obtain

- Aroma best released when heated or cooked
- Used in rich and flavourful dishes
