VEGETARIAN MUSHROOM CHILLI RECIPE
Cozy up in front of the fireplace with this hearty vegetarian chilli featuring portobello mushrooms, diced tomatoes, kidney beans, onions, and garlic.
INGREDIENTS
- 2 tbsp olive oil
- 1 medium onion, diced
- 1 lb portobello mushrooms, roughly chopped
- 2 tbsp minced garlic
- 1 tbsp chilli powder
- 1 can diced tomatoes
- 1 can red kidney beans
- Salt and pepper, to taste
- Shredded cheese, for topping
- Sour cream, for topping
- Avocado, for topping
INSTRUCTIONS
Heat the olive oil in a large pot on medium. Add the diced onions and cook until tender. Add the chopped mushrooms, minced garlic, and chilli powder. Cook for 10 minutes, stirring frequently. Pour in the diced tomatoes and kidney beans. Season with salt and pepper to your desired taste. Reduce heat to low, cover, and let simmer for 45 minutes. Serve in bowls topped with shredded cheese, a big dollop of sour cream, and avocado chunks.
