Pumpkin Garlic Knots Recipe


PUMPKIN GARLIC KNOTS RECIPE

Yes we are complete fall fanatics and will continue to devour everything pumpkin we can get our hands on. These Pumpkin Garlic Knots are warm, soft, and perfectly flavoured with pumpkin puree, honey, and garlic cloves.

INGREDIENTS

  • 1 cup warm water
  • 1 envelope active dry yeast
  • 2 tbsp honey
  • 2 tbsp & ⅓ cup olive oil
  • ½ cup pumpkin puree
  • 3.5 cups bread flour
  • 1 tsp coarse kosher salt
  • 1 tbsp minced garlic (can add more if you like things extra garlicky)
  • Salt and black pepper, to taste
  • ½ tsp dried oregano

INSTRUCTIONS

Pour the warm water into a bowl and whisk with the yeast. Let sit for 10 minutes. Whisk in the honey, 2 tbsp olive oil, and pumpkin puree. In a separate bowl, whisk together the flour and kosher salt. Make a well in the center of the dry ingredients then pour in the wet mixture. Use a rubber spatula and mix all of the ingredients together well. Then, use your hands to begin kneading the dough. Knead until it comes together in a smooth ball, adding flour as necessary to prevent sticking. Lightly oil another bowl and place your dough ball inside. Flip it over once to coat all sides evenly with the oil. Cover with a damp towel and let rise for 2 hours. 

Preheat your oven to 425. Divide the dough in half. Freeze one half for another time in a clean, ziplock bag. Tear off sections of the dough, about 2 tbsp at a time, and roll them into a long snake shape. Tie that snake into a knot. Repeat with the remaining dough. Spray a baking pan with olive oil and place all of your knots on top. Bake for about 10 minutes or until golden brown. While baking, mix together the remaining ⅓ cup olive oil, minced garlic, salt, pepper, and dried oregano. When the knots are done baking, toss in the olive oil mixture and enjoy.
