Pea Shoot Summer Salad Recipe


PEA SHOOT SUMMER SALAD RECIPE

This refreshing summer salad features pea shoots, which usually come from snow or sugar pea plants. They are harvested as young 2-6 inch shoots including some leaf pairs and immature tendrils. Pea shoots share a subtle pea flavour and have a light, crunchy texture. It’s becoming more common to include pea shoots in salad recipes and stir-fry dishes. They are an excellent replacement for spinach with significant amounts of vitamins and minerals.

INGREDIENTS

  • 8 cups pea shoots

  • ½ cucumber, sliced
  • 1 cup radishes, sliced
  • ½ cup almonds, sliced
  • 2 tbsp sesame oil
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce
  • 1 tsp brown sugar
  • 1 tsp garlic, minced

INSTRUCTIONS

Mix together the sesame oil, rice vinegar, soy sauce, brown sugar, and minced garlic in a bowl. Stir well with a whisk. Add the pea shoots, cucumber, radishes, and almonds. Toss gently to coat and enjoy.
