Gooseberry Crumble Recipe


This gooseberry crumble recipe incorporates our fresh gooseberries with a brown sugar cinnamon topping and rich vanilla ice cream.


  • 5 cups gooseberries, cleaned & tough ends removed
  • ¼ cup sugar
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 2 tbsp cornstarch
  • Butter to grease baking dish


  • ⅔ cup flour
  • ½ cup brown sugar
  • ¼ tsp cinnamon
  • Pinch nutmeg
  • Pinch salt
  • ⅓ cup butter, cubed


Preheat oven to 350. Grease a 9-inch baking dish with butter and set aside. Add the gooseberries, sugar, lemon zest, lemon juice, and cornstarch to a bowl. Stir to combine and pour into buttered baking dish. Set aside. In a bowl, whisk together the flour, brown sugar, cinnamon, nutmeg, and salt. Add the crumbled butter. Stir into a coarse mixture, leaving some butter clumps. Sprinkle crumble mixture over the gooseberries. Bake for 45 minutes or until top is golden brown and crispy. Allow gooseberry crumble to cool for 30 minutes before serving with vanilla ice cream.
