CHANTERELLE MUSHROOM GRAVY RECIPE
This Chanterelle Mushroom Gravy is divine on top of Christmas turkey dinner. It's also a great alternative for your vegetarian guests. Chanterelles are a wonderful addition to any fancy meal with their delicate peppery flavour, golden buttery yellow colour, and melt in your mouth consistency.
INGREDIENTS

2 tbsp extra virgin olive oil
- 2 shallots, minced
- 1 tbsp garlic, minced
- 1 heaping cup chanterelle mushrooms, chopped
- 1/4 cup flour
- 2-3 cups mushroom broth, depending on desired thickness
- 1 tsp salt
- 1 tsp pepper
- 1/3 cup heavy cream
INSTRUCTIONS
Add the olive oil, shallots, garlic, and chanterelles to a large pot. Saute until soft. Sprinkle the mixture with flour. Pour in the mushroom broth and mix well. Bring to a boil and reduce heat until thickened. Season with salt and pepper to taste. Stir in the heavy cream. Pour into a blender to puree into a gravy. Serve hot over turkey dinner or roast.
