Baked Mushroom Feta Pasta Recipe


BAKED MUSHROOM FETA PASTA RECIPE

A more personalized take on the viral Baked Feta Pasta using assorted mushrooms to replace the baby tomatoes.

INGREDIENTS

  • 1 package Misty Mountain Mushrooms, chopped
  • 1/2 red onion, chopped
  • 1 large block feta cheese
  • 3 tbsp olive oil
  • 2 tbsp minced garlic
  • 1 tsp oregano
  • 1 tsp thyme
  • Salt & pepper, to taste
  • 1 package pasta, cooked & drained

INSTRUCTIONS

Preheat oven to 400. Drizzle olive oil into a large baking tray. Add the chopped mushrooms and red onion. Place the block of feta in the middle. Drizzle everything with the remaining olive oil. Sprinkle with minced garlic, herbs, salt, and pepper. Bake for 20-25 minutes or until the mushrooms are caramelized. While baking, cook and drain the pasta as directed on packaging. Add to the mushroom dish and stir well.
